Recipe of the Week – Portobello Mushroom Pizza



4 Tomatoes diced

4 Large portobello mushrooms

4 Cloves of garlic chopped

1 Tablespoon of lemon juice

1 Leek chopped

1 Onion chopped

5 leaves of fresh basil chopped

Parmigiano reggiano cheese

Fresh parsley

Olive oil



  1. Preheat oven at 400 degrees
  2. Heat up about 2 table spoons of olive oil
  3. Stir the onion until it’s slightly brown
  4. Add the tomatoes, garlic,leek, and pinch of salt to the onions. Saute the ingredients until the tomatoes are soft
  5. Add lemon juice
  6. Add basil
  7. Spray olive oil on a baking sheet and place the mushrooms on the sheet with the bottom side up.
  8. Add the mixed ingredients from the sauce pan into each mushroom and top with grated parmegiano cheese
  9. Bake for 12 minutes
  10. Sprinkle with fresh parsley
